I-Love-You Lunchbox
First day back to school can be tough for you – if not for your kids! Remind your little one of a mother’s love with this specially prepared lunchbox. (note to self: this one will be well-received by primary schoolers; not so much by the bigger kids!)

4 slices wholegrain bread |
4 slices of ham |
180g sliced mild cheddar |
Strawberries |
Blueberries |
3 Mini Babybels |
(Freshly made) Fruit Smoothie on the side (suggest a blend of strawberry, blueberry, banana, yoghurt) |

Make the sandwich using your child’s favourite ingredients (ham and cheese should do the trick). Next, use a heart-shaped cookie cutter to form the sandwich shape – or simply cut out the shape with a sharp knife. Half a few strawberries, cutting out a small ‘v’ at the top of each half. Pile some blueberries into the lunchbox, scattering the ‘strawberry hearts’ on top. Hold each Babybel firmly on a chopping board, using a small sharp knife to cut out the ‘hairstyle’ (you can as creative as you like here – but three little slices will get you a basic ‘mum’ cut!). If you like, pop two sesame seeds on each cheese for eyes. Finally, in a blender, blitz a handful each of strawberries and blueberries, one sliced banana and three tablespoons of natural yoghurt, pouring into a beaker to make a tasty schoolyard smoothie.
