A fabulous advert for one-pot cooking with some real substance on the plate.
|4 x 175g (6oz) thick portions cod or haddock|
|2 courgettes, sliced|
|2 tbsp olive oil|
|12 cherry tomatoes|
|125g (4 1/2oz) green beans, topped and tailed|
|8 black olives, pitted|
|Salt and black pepper|
Preheat the oven to 200C/400F/gas mark 6. Place the cod and courgettes into a large roasting tray and drizzle with half the oil. Roast for 5 minutes. Add the cherry tomatoes, green beans and olives. Season and drizzle with the remaining oil. Roast for a further 15 minutes or until the cod is cooked and vegetables slightly softened. Serve immediately.
