A luxurious treat for a weekend breakfast or brunch with friends.

Ingredients
6 eggs
dash of milk
15g (1/2 oz) butter
Salt and freshly ground black pepper
100g (4oz) smoked salmon, cut into large strips
4 English muffins, toasted
1 tbsp chopped chives

directions

Crack the eggs open into a bowl, add the milk and seasoning. Beat with a fork for about 15 seconds. Melt the butter in a pan over a low heat, then add the egg mix. Stir with a wooden spoon until the eggs are scrambled but still soft. Add the smoked salmon and serve on hot muffins with the chives sprinkled over the top.
