Chicken nuggets with BBQ sauce
All kids love chicken nuggets… show them how to make them at home and they’ll always want more! Our version sees chicken breast chunks covered with breadcrumb and crushed cornflake mix, oven baked and served with a simple homemade bbq sauce. Can be eaten cold too, so ideal to make ahead and bring to the beach as a snack.

25g shop-bought breadcrumbs |
25g Cornflakes, crushed |
2 chicken breasts, cut into chunks |
1 egg, beaten |
4 tbsp tomato purée |
1 tbsp Worcestershire sauce |
1 tsp smoked paprika |
25g brown sugar |
2 tbsp red wine vinegar |
100ml water |
directions
Heat the oven to 200C.
Mix the breadcrumbs and cornflakes together in a bowl.
Dip a chicken piece into the beaten egg and then toss in the breadcrumb mixture to lightly coat it and place on a baking tray. Repeat with all pieces of chicken.
Place in the oven to bake for 10-15 minutes or until golden and cooked through.
Meanwhile, mix the BBQ sauce ingredients in a saucepan and place over a medium heat until bubbling. Simmer gently for five minutes then remove from the heat. Add more water if sauce is too thick. This sauce can be made ahead of time if you’d prefer to serve cold.
