Warm spring greens with lemon dressing

Peas, green beans and sliced courgette are tossed in a lemon and parsley vinaigrette.

Ingredients
250g courgette, halved and quartered lengthways
200g green beans, trimmed
250g frozen peas
For the dressing:
4 tbsp olive oil
2 tbsp lemon juice
Handful of fresh parsley, roughly chopped

directions

  1. For the dressing, whisk together the oil and lemon juice. Stir in the parsley and season with salt and black pepper.
  2. Bring a large pan of water to the boil.
  3. Add the green beans and cook for one minute. Add the courgettes and peas and cook for another 2-3 minutes until everything is just tender.
  4. In a large bowl, gently toss the vegetables with the dressing. Serve immediately.
