Summer berry & white chocolate trifles
A very simple dessert but also very moreish! Chopped strawberries, blackberries and raspberries with lemon zest are smothered in a thickened mix of melted white chocolate and cream.

150g fresh raspberries |
150g fresh blueberries |
Zest of 1 lemon |
120ml double cream |
150g white chocolate, broken into pieces |
A few fresh mint leaves, for garnish |

Add the berries and lemon zest into a bowl and refrigerate until needed.
Heat the cream in a pan over a low-medium heat until almost simmering. Add in the chocolate and turn the heat off. Stir constantly to help melt the chocolate. The mixture should thicken slightly.
Heat the grill to a high heat.
Take the berries out of the fridge and spoon into ramekins. Spoon the chocolate cream over the berries and sprinkle with a little icing sugar.
Place the ramekins under the grill for 2-3 minutes and serve with a garnish of mint leaves.
