Pizza Baguette
Shop-bought pizzas don’t even compare to a home-made one, but if you are busy…. and don’t have time to make home-made dough, these pizza baguettes are just as delicious and far healthier.

Ingredients |

2 tbsp olive oil |
1 small onion, finely chopped |
1 garlic clove, crushed |
300g (12oz) cherry tomatoes, halved |
1 baguette |
A selection of your favourite pizza toppings: ham, salami, peppers, |
anchovies, olives, chicken, rocket |
150g (6oz) grated cheddar |
Salt and freshly ground black pepper |
directions
Heat a frying pan over a medium heat and add the olive oil. Fry the onion until soft then add the garlic and cherry tomatoes. Cook over a medium heat until the tomatoes have broken down and the watery juices have evaporated, leaving you with a lovely thick tomato sauce. Season with salt and pepper and a little sugar if the tomatoes are not sweet enough. Preheat the oven to 180C/350F/gas mark 4. Slice the baguette in half horizontally and then into portions about 20cm long. Spread a little of the fresh tomato sauce onto the baguette and then top with your choice of pizza toppings followed by a sprinkle of cheese. Place on a baking tray and then pop them into the oven and bake until the cheese has melted and become golden. Serve hot with salad.
