Apple and carrot salad pittas
Grated apple and carrot mixed with a light plain yoghurt dressing, served in wholemeal pittas with sliced turkey and lettuce.

3 carrots, grated |
1 green apple, grated |
1 large handful fresh coriander, chopped |
120g plain low-fat yoghurt |
30ml lemon juice |
½ tsp ground cumin |
Salt and black pepper |
For the pittas: |
4 large wholemeal pitas |
4-8 slices of turkey |
Butterhead lettuce, chopped |
directions
- In a large bowl, combine the carrots, apple and coriander.
- In a jar, combine the yoghurt, lemon juice, cumin and a pinch each of salt and black pepper. Cover with the lid and shake to blend. Taste and add more seasoning if desired.
- Stir the dressing into the salad mixture.
- To serve, fill each pitta with 1-2 slices of turkey, a small handful of chopped lettuce and some of the apple and carrot salad.
