Chicken Satay

Olive oil |
4-6 chicken breasts (depending on size), cut into 2cm strips |
Long wooden skewers |
2 cloves garlic, finely chopped |
A thumbnail's length of ginger, finely chopped |
8 tbsp crunchy peanut butter |
4 tbsp dark soy sauce |
4 tsp brown sugar |
2 tbsp hot water |

Thread the chicken onto the skewers, and grill the chicken for about 8 minutes on each side. Meanwhile, fry the garlic and ginger in a pan, then add the peanut butter, soy sauce and sugar. Stir until it dissolves, then add the hot water. Serve with the chicken skewers.
