Difficulty: Easy
Serves: 2 portions
2 nests of medium egg noodles
1 tbsp sesame oil
50g butter
3 spring onions, chopped, plus extra to garnish
3 garlic cloves, crushed
2 tbsp brown sugar
2 tbsp soy sauce
Handful of beansprouts

1 Bring a pot of water to a boil and cook the noodles according to package instructions. Drain well and drizzle with the sesame oil to prevent them from sticking together.
2 Melt the butter in a saucepan over a medium-high heat. Add the spring onions and garlic and cook for one minute.
3 Add the sugar and stir vigorously until completely dissolved.
4 Add the soy sauce and beansprouts. Stir to combine thoroughly and cook for one minute longer to heat through.
5 Toss the noodles with the sauce, plate and garnish with extra spring onions.
