Serves: 2 portions
Ingredients
350g mince beef
500g potatoes peeled and diced
1 medium onion peeled and diced
3 carrots peeled and diced
1 beef stock cube
1 tsp dried parsley
1 tsp dried rosemary
salt and pepper
1 tbsp olive oil
dash of worcestershire sauce

directions

  1. Place a pot of the stove and add a splash of olive oil. Once the oil is hot add the mince. Stir occasionally until the meat is golden brown in colour.
  2. Add the diced onion to the pot. Add the dried parsley, dried rosemary and a pinch of salt and pepper to the pot.
  3. Dilute the beef stock cube in water following the directions on the pack and then add to the pot.
  4. Allow to cook with no lid for 20 minutes.
  5. Add the diced potatoes and carrots to the pot.
  6. Continue to cook for a further 30 minutes until the potatoes and carrots are cooked. Stir occasionally.
  7. Add a dash of Worcestershire Sauce and your stew is ready to serve.
