Mushroom Noodles
A quick and easy meal for when you need to something nutritious to eat fast.

Ingredients |

4 blocks of egg noodles |
1 tbsp olive oil |
1 garlic clove, finely chopped |
6 spring onions, chopped |
2.5cm of ginger, peeled and finely chopped |
1 red pepper, thinly sliced |
2 red chilis, deseeded and thinly sliced |
450g selection of mushrooms (button, oyster, shitake), chopped |
3 tbsp dark soy sauce |
2 tbsp water |

Cook the egg noodles as per the instructions on the packet, drain and set aside. Heat the oil in a wok and fry the ginger, garlic and spring onions for a few minutes. Then add the rest of the vegetables, the soy sauce and water and fry for a few minutes.
