A quick and easy meal for when you need to something nutritious to eat fast.
|4 blocks of egg noodles|
|1 tbsp olive oil|
|1 garlic clove, finely chopped|
|6 spring onions, chopped|
|2.5cm of ginger, peeled and finely chopped|
|1 red pepper, thinly sliced|
|2 red chilis, deseeded and thinly sliced|
|450g selection of mushrooms (button, oyster, shitake), chopped|
|3 tbsp dark soy sauce|
|2 tbsp water|
Cook the egg noodles as per the instructions on the packet, drain and set aside. Heat the oil in a wok and fry the ginger, garlic and spring onions for a few minutes. Then add the rest of the vegetables, the soy sauce and water and fry for a few minutes.
