A quick and easy meal for when you need to something nutritious to eat fast.

Serves: 4
4 blocks of egg noodles
1 tbsp olive oil
1 garlic clove, finely chopped
6 spring onions, chopped
2.5cm of ginger, peeled and finely chopped
1 red pepper, thinly sliced
2 red chilis, deseeded and thinly sliced
450g selection of mushrooms (button, oyster, shitake), chopped
3 tbsp dark soy sauce
2 tbsp water


Cook the egg noodles as per the instructions on the packet, drain and set aside. Heat the oil in a wok and fry the ginger, garlic and spring onions for a few minutes. Then add the rest of the vegetables, the soy sauce and water and fry for a few minutes.
