Lemony Chicken, Feta and Avocado Pasta
|500g whole wheat spaghetti|
|1tsp salted butter|
|Olive oil, to drizzle|
|3 free-range chicken breasts|
|1 whole ripe avocado|
|2 rounds of feta cheese|
|Salt and ground black pepper|
|Zest of 1 lemon|
|Bunch of fresh rocket|
Cook pasta according to the packet instructions until al dente
Drain, rinse and drizzle with olive oil.
Butterfly the chicken breasts and season them with salt and pepper.
Heat a grill pan and slowly fry the chicken breasts in the butter and a little olive oil until cooked through.
Shred the chicken breasts and add them and the lemon zest to the pasta.
Crumble the feta cheese into the pasta, taste and season it with salt and black pepper.
