Hearty Pasta Bake

200g (8oz) penne pasta |
2 tbsp (30ml) olive oil |
1 onion, finely chopped |
2 cloves garlic, finely chopped |
3 celery sticks, chopped |
100g (4oz) carrots, diced |
100g (4oz) mushrooms, chopped |
100g (4oz) ham, diced or cut into large chunks |
25g (1oz) butter |
25g (1oz) plain flour |
400ml (15fl oz) milk |
100g (4oz) cheddar |
Salt and freshly ground black pepper |
directions
Put the pasta on to simmer. Fry the onion and garlic for a few minutes, then add the rest of the vegetables, and the ham. Meanwhile, make a roux sauce with the butter, flour and milk, adding the milk gradually and stirring continuously to avoid lumps. Add the cheese. Preheat the grill to medium. When the pasta is cooked, drain, and mix with the vegetables and ham and sauce. Transfer to a casserole dish. Sprinkle some grated cheese on top and grill for 7 minutes.
