Cheesy Chicken Fajitas

225g (1/2 pound) chicken breasts, cut into thin strips |
1 clove garlic, finely chopped |
1 tbsp olive oil |
1 green or red pepper, cut into strips |
1 onion, chopped |
150g (6oz) cheddar, grated |
6 flour tortillas, heated |
directions
Heat olive oil in a wok or frying pan. Add the chicken and garlic and fry for about 5 minutes. Heat up the tortillas. Add the pepper and onion, and cook for a further 5 minutes until the chicken is cooked. Place a few spoonfuls of chicken mixture and some cheese in a line down the centre of each tortilla and roll up. Serve with salsa, guacamole, sour cream.
