Cajun Pork with Pineapple Salsa
This spicy rub works with steak or salmon. If you like your food hot, don\’t hold back – go for the extra chilies!

4 Pork chops, trimmed |
1 tsp sweet paprika |
2 tsp crushed chillies |
3 cloves garlic, crushed |
1/2 tsp sea salt |
1 Romano pepper, deseeded and finely diced |
1/2 medium pineapple, peeled, cored and finely diced |
1/4 cucumber, finely diced |
2 tbsp fresh coriander, finely chopped |
2 tsp extra virigin olive oil |

Trim any excess fat from the pork. Mix together the paprika, chilli, garlic and salt and rub it all over the pork. Leave to stand for 30 minutes. Mix together the pepper, pineapple, cucumber and coriander. Add the olive oil and leave the flavours to infuse. Heat a griddle pan until smoking and cook the pork for 5-6 minutes each side or until it is thoroughly cooked. Serve the pork with the salsa on a bed of rice.
