Bacon Avocado Bombs
A delicious combination of avocado, cheese, tomato and bacon. Fun for the whole family to make.
Kitchen Tip! Add chilli to the tomato and cheese mix, for a spicy alternative. Great served with toast or English muffins and a poached egg.

Ingredients |

2 Small Avocados, peeled and halved, pit taken out |
75g Red Cheddar, grated |
1g Fresh Parsley, finely chopped |
2 TBLS Tomato, chopped |
Salt & Pepper |
8 to 10 slices Bacon, Streaky or Back |

1 Heat the grill and line a baking tray with foil.
2 Fill 2 halves with cheddar, parsley & tomato. Season with salt and pepper. Top each half with the other half of avocado.
3 Wrap each avocado with 4 slices of bacon to cover completely. Bacon should hold together but if you worried then secure with a toothpick.
4 Place the avocados on the baking tray and grill until the bacon is crispy, about 5 minutes. Carefully, turn the avocado over and cook the other side until crispy all over
5 Cut in half crosswise and serve immediately.
