1 tbsp olive oil
1 onion, finely chopped
1 garlic clove, finely chopped
2 tsp Italian dried herbs
1 tsp thyme
400g (16oz) can chopped tomatoes
1 tablespoon tomato purée
250g (10oz) of mixed seafood, fresh or defrosted
400g (16oz) spaghetti


Fry the onion and garlic in the olive oil for a few minutes. Add the herbs, purée and chopped tomatoes, and then add the seafood. Turn down to a simmer. Put the spaghetti on to cook. Once the pasta is al dente, drain and combine with the seafood sauce.
