Creamy Mushroom Pasta

| 1 tablespoon rapeseed oil |
| 150g mushrooms, sliced |
| 220ml vegetable stock |
| 1 teaspoon oregano, picked |
| ½ tablespoon lemon juice |
| 125g light cream cheese |
| 125g baby spinach |
| 120g wholewheat pasta |

directions
1. In a pot of boiling water, add pasta and cook for 10 mins.
2. In a frying pan heat the oil. Add mushrooms, stirring regularly.
3. Then add the oregano, vegetable stock, pepper and lemon juice and cook together for 10-15 minutes or until sauce reduces to half its size.
4. Add in the cream cheese and baby spinach and cook on low heat for 5 minutes.
5. Add the cooked drained pasta to the frying pan. Coat with sauce.
