Coconut Fish Parcel
| Ingredients |

| 2 x 150g white fish fillets |
| 2 teaspoon curry paste |
| 1 teaspoon desiccated coconut |
| zest of 1 lime, grated from the skin of a lime |
| juice of 1 lime |
| 1 teaspoon light soy sauce |
| 2 tablespoon sweet chilli sauce |
| 100g wholegrain rice |
| 300g frozen peas |
directions
1. In a pot of boiling water, place potatoes and simmer until cooked.
2. In a bowl toss the onion with vinegar. Let stand for 5 – 10 minutes.
3. Add oil to onions and vinegar.
4. Toss the baby spinach, tomatoes, tuna, and olives with the onion mixture.
5. Slice the cooked potatoes and add to the salad.
6. Sprinkle the grated parmesan on top of salad.
