Falafel and Salad

| 115g tin of chickpeas, drained, rinsed and dried. |
| ½ small red onion, chopped |
| 1 clove garlic, chopped |
| Handful fresh parsley, chopped |
| ½ teaspoon cumin |
| ½ teaspoon coriander |
| ½ teaspoon chilli powder |
| 2 tablespoon flour |
| 1 tablespoons rapeseed oil |
| 2 wholemeal round pitta breads (90g) |
| 100g tomato salsa |
| Salt |
| OT Side Salad: |
| 100g Baby spinach |
| 100g Cherry tomatoes |
| 8 slices cucumber |
directions
1. To a bowl, add chickpeas, onion, garlic, parsley, cumin, coriander, chilli, flour and a pinch of salt. Use a hand blender to blend until smooth.
2. Form into 6 patties.
3. In a non-stick frying pan heat the oil and then add the patties.
4. Fry for 3 minutes on each side or until golden brown.
5. Make your OT side salad by mixing baby spinach, cherry tomatoes and cucumber.
6. Toast your pitas.
7. Slice the pittas open and add a spoon of salsa and 3 falafel patties..
8. Serve the falafel pitta, with the side salad.
