Barbecued chicken breasts are shredded and tossed with barbecue sauce, then piled into mini burger buns and topped with Cheddar, lettuce and red onion.

|4 chicken fillets|
|Salt and black pepper|
|250ml barbecue sauce|
|12 mini slider buns|
- Preheat a barbecue or grill pan to a medium-high heat. Season the chicken with salt and pepper and drizzle with olive oil. Cook on the barbecue for 5-6 minutes per side until cooked through.
- Brush the top of the fillets with some of the barbecue sauce. Close the lid (or cover the pan with foil) and cook for another two minutes until the sauce is sticky and thick.
- Remove from the heat and transfer to a chopping board. Use two forks to shred the chicken. Place in a bowl and toss with the rest of the barbecue sauce.
- Add some of the chicken to each slider bun and top with coleslaw to serve.
