Creamy Haddock and Mushroom Bake

Operation Transformation Main Meal

WEEK 8 DAY 48 – WEDNESDAY 22ND FEBRUARY 2017

Serves: 2 portions
Ingredients
300g haddock (2 x 150g fillets)
250g potatoes, peeled
150g mushrooms, sliced
100g spinach
125g light cream cheese

directions

Preheat oven to 180C/160C fan /gas mark 4

Place potatoes in cold water in a pot and place lid on pot

Parboil potatoes for approximately 10 minutes. Drain water, allow to cool slightly and cut into slices

Place sliced mushrooms in a pan on medium heat and add cream cheese. Stir for a few minutes to form creamy sauce

Add chopped spinach to the creamy sauce and stir until spinach has wilted into the sauce

Place haddock fillets and sliced potatoes in an ovenproof dish

Pour mushroom sauce over the fish and potatoes and place dish in oven for 15 – 20 minutes until fish is cooked through

Divide the bake into two and serve
