Grated apple and carrot mixed with a light plain yoghurt dressing, served in wholemeal pittas with sliced turkey and lettuce.

|3 carrots, grated|
|1 green apple, grated|
|1 large handful fresh coriander, chopped|
|120g plain low-fat yoghurt|
|30ml lemon juice|
|½ tsp ground cumin|
|Salt and black pepper|
|For the pittas:|
|4 large wholemeal pitas|
|4-8 slices of turkey|
|Butterhead lettuce, chopped|
- In a large bowl, combine the carrots, apple and coriander.
- In a jar, combine the yoghurt, lemon juice, cumin and a pinch each of salt and black pepper. Cover with the lid and shake to blend. Taste and add more seasoning if desired.
- Stir the dressing into the salad mixture.
- To serve, fill each pitta with 1-2 slices of turkey, a small handful of chopped lettuce and some of the apple and carrot salad.
