Turkey salad pinwheels

Tortilla wraps lined with mayonnaise, sliced turkey, carrot, cucumber and lettuce, rolled up and sliced into colourful pinwheels.

Per serving (4-5 pinwheels): 264kcals, 8.2g fat (1.5g saturated), 36.2g carbs (4.2g sugars), 12.7g protein, 4.8g fibre, 1.009g sodium

Serves: 4-5 pinwheels
1 large tortilla wrap
½ tbsp mayonnaise
2 slices of turkey
2 tbsp carrot, grated
1 x 4cm piece of cucumber
2 Butterhead lettuce leaves


1 Spread the tortilla wrap with the mayonnaise, spreading it right out to the edges. Place the turkey slices on top.
2 Place the grated carrot in a line down the centre of the wrap.
3 Use a vegetable peeler to peel wide strips from the cucumber, stopping when you get to the seeds. Place 4-5 cucumber slices on top of the carrot.
4 Top with the lettuce leaves.
5 Roll up the tortilla wrap tightly. The mayonnaise should hold it together; if needed, add 1-2 cocktail sticks to secure.
6 Use a sharp knife to slice the wrap at 2cm intervals. Wrap each pinwheel in cling film and pack in a lunchbox.
