Orange peppers are carved to look like a jack-o-lantern, then stuffed with an easy rice, tomato, pepper and mince mixture and baked until soft for a wholesome and filling meal idea. Ideal Halloween dinner!

|6 orange/yellow peppers|
|450g beef mince|
|4 slices of wholemeal bread, cubed|
|1 small onion, chopped|
|1 small tomato, diced|
|2 garlic cloves, crushed|
|½ x 400g tin of chopped tomatoes|
|4 tbsp mustard|
|3 tbsp Worcestershire sauce|
|Salt and black pepper|
1. Preheat the oven to 180˚C/160˚C fan/gas mark 4. Grease a small baking dish.
2. Combine the beef mince, egg, bread cubes, onion, tomato, garlic, tomatoes, mustard, Worcestershire sauce, salt and pepper in a bowl.
3. Slice the tops off of the peppers and scoop out the seeds and membranes. Use a small, sharp knife to carve jack-o’-lantern faces into the peppers. Stuff the peppers lightly with the beef mixture and place them into the prepared baking dish so they lean against each other.
4. Bake in the oven for about one hour until the peppers are tender and the stuffing is cooked through and juicy.
