Grilled peaches with honeyed Mascarpone and pistachios

Ripe, seasonal peaches are grilled until soft and sweet, then topped with a dollop of honeyed Mascarpone and some crushed pistachios for a simple summer treat.

Vegetable oil, for brushing
4 large ripe peaches, halved and pitted
4 tbsp honey, plus more for serving (optional)
200g mascarpone cheese, at room temperature
4 tbsp pistachios, chopped


  1. Preheat a barbecue or grill pan to medium-high. Brush the grates or the pan lightly with some oil. Cook the peaches, cut side down, for 2-3 minutes until lightly charred and softened.
  2. Whisk the honey and mascarpone until combined.
  3. Transfer the peaches to serving plates and top with some of the mascarpone. Drizzle with extra honey, if desired, and top with the chopped pistachios.
