|60g fresh ginger, peeled and sliced|
|1 x 750ml bottle of Prosecco or Champagne|
|3 tbsp candied ginger, cut into cubes|
|1 lemon, sliced into wedges|
|2 tbsp sugar|
- Simmer the water, sugar and ginger for the syrup in a small saucepan over a medium-low heat for 10 minutes. Remove from the heat and stir in the vodka.
- Chill for at least two hours. When ready to serve, strain to remove the ginger pieces.
- Spread the two tablespoons of sugar into a thin layer on a plate. Coat the rim of the glass with the juice from the lemon wedge and immediately dip into the sugar to coat the rim.
- Add a few pieces of candied ginger to each glass. Pour in one tablespoon of the ginger syrup and top with the sparkling wine.
