Cream prawn cocktail with traditional flavours, topped with soft and buttery smoked salmon and a chunky salsa. This will get your meal off to a great start.

Serves: 4 to 6 portions
Ingredients
200 – 250g prawn cocktail
100g smoked salmon
Avocado salsa
1 medium avocado, finely chopped
3 radishes, finely chopped or shredded
½ cucumber, finely chopped
1tbls lemon juice
½ tsp. Fresh dill, finely chopped
Cracked black pepper
Crostini or toasted baguettes

directions

  1. Avocado Salsa: Combine all ingredients in a medium bowl, season with salt and pepper. Gently stir to combine. Allow to chill until required.
  2. In your individual glasses, spoon the prawn cocktail to half way. Take your smoked salmon and twist it or roll it to look like a rose and put on top of the cocktail.
  3. Put a spoon of Salsa over each and serve with crostini or toast.

Cooks Tip! These can be assembled up to the salmon the day before and refrigerated. Add the salsa just before serving.
