Warming beef and vegetable stew

There are days when there’s nothing better than a warming stew, and they don’t always have to take a long time to make. Served with mash, this is a comforting mid-week meal.

Serving Suggestion: Serve with hunks of crusty bread to mop up the gravy

Serves: 2 portions
Ingredients
200g stewing beef, or steak cut into 1cm pieces
1 medium onion, peeled and finely sliced
1 clove garlic, peeled and minced
1 beef stock cube
400g potatoes, peeled and cut into chunks
200g mixed frozen vegetables
2 tbsps vegetable oil
2 level tsp gravy granules
25g butter (optional)
Salt and black pepper

directions

  1. Heat 1 tbsp oil in a saucepan, add the steak pieces and fry until starting to brown. Remove from the pan.
  1. Heat the remaining oil, add the onions and cook at a medium heat for 5 minutes until starting to turn golden. Add the minced garlic and cook for 1 minute.
  2. Dissolve the stock cube in 300ml of boiling water and add to the beef mixture. Return the meat to the saucepan and allow to cook gently for 10 minutes.
  3. Meanwhile, put the potatoes in a pot of water with a touch of salt, bring to the boil and cook until soft. Strain the potatoes and place back in the pot. Add the butter if using, salt and pepper to taste, and mash until smooth.
  4. Add the frozen vegetables and the gravy granules to the beef stew, bring up to the boil and simmer gently for the length of time indicated on the pack.
  5. Divide the mash and stew between two plates and serve.
