Turmeric, lemon and garlic lamb chops

Ingredients |

8 lamb chops |
1 tbsp olive oil, plus extra for cooking |
Zest of 1 lemon and 1 tbsp lemon juice |
4 garlic cloves, crushed |
½ tsp turmeric |
½ tsp dried oregano |
Salt and black pepper |
directions
1 Pat the lamb chops dry with kitchen paper.
2 In a small bowl, combine the olive oil, lemon zest and juice, garlic, turmeric, oregano and some salt and pepper. Stir together into a paste.
3 Rub the paste all over the lamb chops. Cover and leave to marinate for 30 minutes.
4 Heat a splash of olive oil in a large pan over a medium-high heat. Cook the lamb chops for 3-4 minutes per side for medium rare, or until cooked to your liking.
