Summer herb salad with orange segments
Middle eastern flavours are so popular this summer and this salad can be whipped up so quickly and easily; fresh herbs – mint, flat-leaf parsley – spring onions and a bag of salad leaves served with a honey, orange and red wine vinegar dressing and topped off with summery orange segments.

Ingredients |

3 tbsp red wine vinegar |
1 tbsp honey |
Juice of 1 orange |
A bunch of fresh mint, roughly chopped |
A bunch of flat-leaf parsley, roughly chopped |
A bunch of scallions, finely sliced |
1 bag of mixed salad leaves |
2 oranges, peeled and segmented |
directions
Mix the ingredients for the dressing together in a small bowl.
Add the salad ingredients into a large bowl and drizzle the dressing on top.
Toss the salad and serve.
