Middle eastern flavours are so popular this summer and this salad can be whipped up so quickly and easily; fresh herbs – mint, flat-leaf parsley – spring onions and a bag of salad leaves served with a honey, orange and red wine vinegar dressing and topped off with summery orange segments.
|3 tbsp red wine vinegar|
|1 tbsp honey|
|Juice of 1 orange|
|A bunch of fresh mint, roughly chopped|
|A bunch of flat-leaf parsley, roughly chopped|
|A bunch of scallions, finely sliced|
|1 bag of mixed salad leaves|
|2 oranges, peeled and segmented|
Mix the ingredients for the dressing together in a small bowl.
Add the salad ingredients into a large bowl and drizzle the dressing on top.
Toss the salad and serve.
