EUROSPAR’s fresh strawberries are transformed into a decadent yet ultra-simple treat in our recipe for Strawberry Swirls.
|2 punnets of strawberries|
|150g caster sugar|
|1 vanilla pod, seeds only (or if not available, then 2 tsp vanilla extract)|
|Shortbread biscuits, to crumble on top|
|2 egg whites|
|100g caster sugar|
Place a large saucepan of water on a high heat until boiling, reduce heat and keep at a simmer.
Mix the strawberries and sugar together in a heatproof bowl and add the vanilla seeds or extract. Cover with clingfilm, place the bowl over the simmering water and cook for 4-5 minutes, or until the strawberries are soft. Remove the pan from the heat, set aside to cool.
Whisk the cream with an electric hand whisk until stiff peaks form.
Whisk the egg whites in a separate bowl until stiff peaks form. Continue whisking as you add the caster sugar a little at a time until the mixture is glossy and thick.
Fold the cream into the meringue mixture.
Fold the strawberry mixture into the meringue cream mixture and spoon into dessert glasses.
Crumble some shortbread biscuits on top and serve.
Mix it up! These little pots of loveliness work equally well using fresh raspberries.
