Spinach Salad

Bursting with iron-rich spinach and Vitamin E-packed walnuts, this salad is a great antioxidant booster. The combination of the sweet pear and the salty cured ham is also wonderful.

Serves: 2
6 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
juice ½ lemon
squeeze of honey
½ tsp wholegrain mustard
200g baby spinach leaves, washed
2 pears, trimmed, cored and cut into quarters
100g feta or blue cheese, crumbled
1 pack Parma ham, cut into strips
50g walnuts, to garnish


To make the dressing combine all the ingredient and mix well. Assemble the salad in a large bowl or elegant platter, dress and serve.
