Bursting with iron-rich spinach and Vitamin E-packed walnuts, this salad is a great antioxidant booster. The combination of the sweet pear and the salty cured ham is also wonderful.
|6 tbsp extra virgin olive oil|
|2 tbsp balsamic vinegar|
|juice ½ lemon|
|squeeze of honey|
|½ tsp wholegrain mustard|
|200g baby spinach leaves, washed|
|2 pears, trimmed, cored and cut into quarters|
|100g feta or blue cheese, crumbled|
|1 pack Parma ham, cut into strips|
|50g walnuts, to garnish|
To make the dressing combine all the ingredient and mix well. Assemble the salad in a large bowl or elegant platter, dress and serve.
