Spinach Salad
Bursting with iron-rich spinach and Vitamin E-packed walnuts, this salad is a great antioxidant booster. The combination of the sweet pear and the salty cured ham is also wonderful.

Ingredients |

6 tbsp extra virgin olive oil |
2 tbsp balsamic vinegar |
juice ½ lemon |
squeeze of honey |
½ tsp wholegrain mustard |
200g baby spinach leaves, washed |
2 pears, trimmed, cored and cut into quarters |
100g feta or blue cheese, crumbled |
1 pack Parma ham, cut into strips |
50g walnuts, to garnish |
directions
To make the dressing combine all the ingredient and mix well. Assemble the salad in a large bowl or elegant platter, dress and serve.
