Ingredients
500g (1lb 3/4 oz) parsnips, peeled and halved
3 tbsp olive oil
3 tbsp clear honey
1 tbsp dark soy sauce
Salt and black pepper
Finely grated zest 1 medium orange

Preheat the oven to 200C/400F/gas mark 6. Pour the oil into a roasting pan large enough to hold the parsnips in one layer. Place the pan in the oven to heat. When the oil is hot, add the parsnips and season with salt and pepper. Cook in the oven for 20 minutes. Mix together the honey, soy sauce and orange zest. Add to the parsnips and toss to coat. Return to the oven for a further 10 minutes until caramelised. Put into a serving dish and pour over any pan juices.
