Raspberry and lemon Eton mess

4 shop-bought meringues, crumbled |
100g white chocolate, roughly chopped |
400g fresh raspberries |
8 tbsp shop-bought lemon curd |
2 tsp vanilla extract |
100g mascarpone |
200ml fresh cream |
directions
1. Beat the cream, mascarpone and vanilla until soft peaks form. Set aside.
2. Layer the whipped cream, lemon curd, fresh raspberries, white chocolate and crushed meringue in individual glasses or serving bowls. Take care to save some raspberries and white chocolate for the top – these will make your desserts look even more beautiful
