Crunchy inner leaves from Little Gem lettuces, filled with William Carr Prawn Cocktail and finished with a sprinkle of smoked paprika and some black pepper.

Ingredients
handful of chives snipped
Smoked paprika
Black pepper
2x200 packs William Carr prawn cocktail
2 Little gem lettuce leaves separated
Lemon wedges

1.Pull the Little Gem lettuces apart and choose 16 cupped leaves that are large enough to fill, saving the rest for another use. Place the leaves on a plate and chill in the fridge for at least 30 minutes.

2.To assemble, arrange the lettuce leaves on a serving platter and spoon some of the prawn cocktail into each one. Sprinkle with black pepper and smoked paprika and scatter over some snipped chives. Serve with lemon wedges, for squeezing

MAKE AHEAD: The lettuce cups, Marie Rose sauce and tomato salsa can be prepared ahead and chilled for up to 24 hours.
