Mini Quiche Bites
These mini quiche bites will last in a sealed container in the fridge for up to 3 days. Allow them to cool fully before refrigerating.

Ingredients |

1 sheet of shop-bought puff pastry, defrosted if frozen |
Salt and pepper to season |
100g feta, crumbled (optional) |
3 spring onions, peeled and chopped |
180g bacon lardons, cooked |
12 eggs |
directions
1. Preheat the oven to 180˚C/160˚C fan/ gas mark 4.
2. Brush a 12-cup muffin tin with melted butter.
3. Roll out the sheet of puff pastry and lay it out over the muffin tin. Push the pastry down into each of the cups leaving the excess pastry in place.
4. Add an egg to each of the cups. Top with a scattering of bacon lardons, spring onions and feta. Use a fork to gently whisk the ingredients together.
5. Use a pizza slice or knife to cut the dough into squares around each muffin cup.
6. Fold the edges of the pastry in and pinch the corners together in the centre.
7. Bake for 15-20 minutes until golden brown and enjoy hot or cold.
