Lettuce Salsa Wraps
Whether grabbing a quick bite at home, or packing up for a sunshine picnic, these salsa wraps are a fun and healthy snack. Lettuce leaves are used instead of traditional wraps, with a mix of avocado, red pepper, sweetcorn, tomatoes, fresh basil and lemon juice to make the salsa filling.

2 beef tomatoes, diced |
1 red pepper, deseeded & diced |
1 avocado, peeled, de-stoned & chopped |
A handful of fresh basil leaves, finely chopped |
1 tin of sweetcorn |
1 x 400g tin of chickpeas, drained and rinsed |
Juice of 1 lemon |
Salt |
Extra virgin olive oil |
8 lettuce leaves, washed |

Method
To prepare your homemade salsa, mix all the chopped ingredients in a bowl with the sweetcorn and chickpeas.
Squeeze the lemon juice in the bowl, followed by a drizzle of extra virgin olive oil and season with a little salt. Mix together well.
Fill the leaves with salsa, wrap and enjoy!
