Hot honey chicken drumsticks with summer slaw
This is the perfect summer recipe! This summer slaw recipe will make slightly more than is needed. Use the leftovers in sandwiches for picnics or as a fresh side dish to any summer meal.

2 tsp tomato purée |
2 spring onions, finely chopped |
5 tbsp mayonnaise or Greek yoghurt |
2 medium carrots, peeled and grated |
¼ red cabbage |
1 tsp Chinese five spice |
2 garlic cloves, crushed |
3cm piece of fresh ginger, peeled and grated |
2 tbsp honey |
8 Inishella Irish Chicken Drumsticks |
2 tsp sriracha |
1 tbsp sesame oil |
¼ white cabbage |
Salt and black pepper |

- Slash the skin on each drumstick three or four times with a sharp knife. Place them in a non-metallic bowl or a sealable plastic bag.
- Combine all of the remaining ingredients and pour over the drumsticks. Leave to marinate for at least three hours, or overnight if possible, turning occasionally.
- In the meantime, to prepare the summer slaw, cut the core from the cabbage quarters and then shred or slice them as finely as you can (use the grater attachment on your food processor if you have one).
- Squeeze any excess liquid from the vegetables, then tip into a bowl and add the spring onions.
- Add the mayonnaise or yoghurt and toss together, then season well.
- Once marinaded, cook the drumsticks on the barbecue over a medium-high heat for about 20-25 minutes, brushing with any marinade left in the dish as they cook. Ensure the chicken is cooked throughout before eating. Serve with coleslaw and dig in.
Different Cooking Methods:
To cook the drumsticks in the air fryer, put the chicken in a preheated air fryer and cook on 190°C for 18-22 minutes, turning the chicken halfway through the cooking time.
If you want to cook it in the oven, put the chicken spread out on an oven tray in a preheated oven of 200°C/180°C fan/gas mark 6 and bake for 20 minutes. Flip each drumstick and bake for a further 20-25 minutes until cooked through.
