Grilled peaches with honeyed Mascarpone and pistachios
Ripe, seasonal peaches are grilled until soft and sweet, then topped with a dollop of honeyed Mascarpone and some crushed pistachios for a simple summer treat.

Vegetable oil, for brushing |
4 large ripe peaches, halved and pitted |
4 tbsp honey, plus more for serving (optional) |
200g mascarpone cheese, at room temperature |
4 tbsp pistachios, chopped |

- Preheat a barbecue or grill pan to medium-high. Brush the grates or the pan lightly with some oil. Cook the peaches, cut side down, for 2-3 minutes until lightly charred and softened.
- Whisk the honey and mascarpone until combined.
- Transfer the peaches to serving plates and top with some of the mascarpone. Drizzle with extra honey, if desired, and top with the chopped pistachios.
