|1 x 4cm piece of fresh ginger, peeled and grated|
|30ml lemon juice|
|15ml egg white|
|Dash of Angostura bitters (optional)|
|1 whole maraschino cherry|
- In a small saucepan, combine the water, sugar and ginger. Bring to a boil over a high heat, then reduce the heat and simmer for three minutes or until the sugar has completely dissolved. Remove from the heat and set aside to infuse and cool completely. Strain through a sieve to remove the pieces of ginger.
- To make one cocktail, fill a cocktail shaker with ice and add the gin, lemon juice, egg white and 20ml of the ginger syrup.
- Shake and strain into a rocks glass filled with ice cubes. Add a shake of bitters, if desired, and garnish with a maraschino cherry.
