Frozen banana ghosts

Ingredients |

200g white chocolate, broken into chunks |
4 medium-large ripe bananas |
100g desiccated coconut |
Handful of dark chocolate drops |
directions
1. In a small bowl, gently melt the chocolate in the microwave in short bursts on medium heat, stirring as you go. Set aside for a moment while you get the bananas prepped.
2. Peel the bananas, cut in half, and push a lollipop stick into the middle of each piece. Spread the coconut out in a shallow bow or on a tray. Lay a sheet of baking parchment on a tray or plate and make sure there is room for it in the freezer.
3. Using a pastry brush, coat a banana half in chocolate, letting excess drip away. Roll the banana in the coconut until coated, then set it on the prepared sheet. Repeat with the remaining banana halves.
4. Decorate each with chocolate drops for eyes and mouths. If you like, you can even cut a few little eyebrows from chocolate drops, for added expression!
5. Freeze the lollies for at least a few hours; they would easily last a week in the freezer.
