Savour a taste of the Mediterranean with this quick version of the Spanish classic.

|2 tbsp olive oil|
|1 onion, finely chopped|
|1 garlic clove, finely chopped|
|2.5cm of ginger, peeled and finely chopped|
|1 tsp paprika|
|1 red pepper, chopped|
|300g (12oz) paella or long grain rice|
|1l (pt) fish, chicken or vegetable stock|
|300g (12oz) large prawns, with or without shells|
|200g (8oz) frozen peas, defrosted|
Heat the olive oil and fry the onion, garlic, ginger and paprika for a few minutes. Add the pepper and rice and stir until the rice is coated in the oil. Add the stock and simmer for 15 minutes. Add the prawns and peas and continue to simmer for 5 minutes. Serve.
