DIY healthy cereal bars

A twist on the old chocolate cereal buns; a tray bake cut into bars of oats, a seed mix, dried fruit and chocolate chips with butter, honey and grated apple. Perfect for a lunch box or a snack on the go!

Serves: Makes 16 (approximately)
Ingredients
150g honey
50g butter
70g sunflower seeds
60g pumpkin seeds
150g rolled oats
50g sesame seeds
125g dried fruit (any kind or mix)
Red apple, peeled and grated

Method

Preheat the oven to 180C. Lightly grease a 3cm-deep, 17.5cm x 27cm (base) tin and line with parchment paper, allowing some paper to overhang.

Melt the butter and honey in a large saucepan over a medium-low heat until you bring it to a simmer. Allow to simmer for 3-4 minutes until thickened.

Add the dry ingredients and the apple to the saucepan and mix thoroughly so that all ingredients are coated with wet mixture.

Spoon into the prepared tin and press into the edges and corners.

Bake for 25-30 minutes or until golden. Allow to cool. Refrigerate for 2 hours and then cut into bars.
