Use dark chocolate and sugar-free peanut butter to make these delicious truffles, free from added sugars – ideal for giving as a gift or simply enjoying as an after-dinner treat.

Ingredients
120g honey
120g sugar-free smooth peanut butter
25g crushed crispy rice cereal
100g finely chopped salted peanuts
200g melted dark chocolate

directions

  1. Mix together the honey, peanut butter and crushed cereal in a large mixing bowl. Place the chopped peanuts on a plate and line a baking tray with parchment paper.
  2. Shape the mixture into small balls, then roll in the peanuts. Place them onto the baking tray, then refrigerate for 30 minutes.
  3. Roll the balls in the melted chocolate, then place back onto the baking tray. Scatter over some extra chopped peanuts, then refrigerate again for 30 minutes until the chocolate has set.
