Brown bread |
Knob of butter |
400g prawns |
1 baby gem lettuce, shredded |
1 avocado, chopped |
6cm piece of cucumber, halved, seeds scooped out and flesh chopped |
Paprika |
Chives, snipped |
Pinch of salt |
4 tbsp lemon juice |
4 drops of Tabasco |
3 tbsp Worcestershire sauce |
3 tbsp tomato ketchup |
4 tbsp full-fat natural yoghurt |
4 tbsp mayonnaise |

- First, make the sauce by mixing all ingredients together in a bowl.
- Melt the butter in a pan over a medium heat and cook the prawns until pink all over.
- To assemble, layer the lettuce into two glass bowls or cocktail glasses. Add the chopped avocado and cucumber.
- Top with the prawns, then spoon over the sauce. Sprinkle lightly with paprika, scatter with chives and serve with brown bread.
