Indulge in this delicious Hot Cross Bun Butter Pudding, the perfect treat at Easter!

Ingredients
6 hot cross buns, cut in half
1/3 cup softened butter
1 slab chocolate, roughly chopped
4 eggs
2 cups milk
1½ cups cream
¾ cup sugar
1 tsp vanilla extract
icing sugar, to serve
vanilla ice-cream, to serve

directions

• Halve the hot cross buns, and butter each half.

• Lay the bottom halves in a 2-litre baking dish, and sprinkle with half the chopped chocolate.

• Put the bun tops on the bun bottoms.

• Beat the eggs, milk, cream, sugar and vanilla together, then pour over the buns. Sprinkle over the remaining chocolate and set the pudding aside for 30 minutes to soak up the custard.

• The pudding can be prepared to this stage several hours in advance and refrigerated (just bring to room temperature before baking).

• When ready to cook, preheat the oven to 180°C.

• Place the dish into a large roasting pan and pour enough boiling water around it to come halfway up the sides so as to create a baine-marie/water bath.

• Cook for about 40-45 minutes or until the custard is set.

• Dust with icing sugar and serve with ice-cream.
