Chickpea Burger Bites
These burger bites will last in a sealed container in the fridge for up to 3 days.

Carrot sticks |
SPAR Hummus |
SPAR Green Pesto |
Yoghurt |
1 medium-sized courgette, grated |
100g flour |
1 tbsp curry powder |
3 tbsp smooth peanut butter |
1 tbsp tomato purée |
400g tin chickpeas, rinsed and drained |
1.5 tbsp honey |
directions
- Preheat the oven 180˚C/160˚C fan/ gas mark 4.
- Add the chickpeas to a blender or food processor and blend into a smooth paste. Tip the paste
into a mixing bowl. - Squeeze as much liquid as possible from the grated courgette and add the almost dry courgette to
the paste. Add in the remaining burger bite ingredients and mix until a dough is formed. - Line a baking tray with parchment paper, and begin to make your burger bites by scooping a
tablespoon of the mix at a time and rolling it into a ball. Repeat this until the the mix is gone. - Gently press each ball to flatten.
- Bake for 15-20 minutes until golden and crispy around the edges.
- Serve hot or cold with a dip of your choice, crudites or salad greens.
