Baked Cod with Mustard

The mustard in this simple recipe adds another dimension to the fish.

Serves: 4
4 cod fillets
2 tbsp olive oil
Salt and freshly ground black pepper
4 tbsp Dijon mustard
1 lemon, cut into wedges
1 tbsp fresh parsley, chopped


Preheat the oven to 220C/425F/gas mark 7. Put the fish in an oven-proof dish and drizzle the olive oil over it. Season, then brush the fillets with the mustard. Bake the fish for about 10 minutes until it is cooked. Serve with a wedge of lemon and a sprinkling of parsley.
